Acorn-Fed 100% Iberian Ham Shoulder (Paleta) by Fermín

The Paleta de Jamón Ibérico de Bellota is made of 100% Iberian pigs that are free-range and feast in acorns (bellotas) in the Dehesa region of Spain. During the “Montanera” acorn season, ibérico pigs enjoy between 6 and 10 kilos of acorns and between 3 and 4 kilos of natural pastures. The exact amount of acorns will vary every year depending on Mother Nature and it can last from 5-7 months.
