According the Denomination Origin officials, the red color, bright appearance when cut, and fat partially infiltrated in the muscle mass are characteristics of this product. Its flavor is due to the low salt content – the elaborate process of stacking the pieces of serrano ham with dry salt and cooking it a low temperatures creates a distinct flavor.
